Menu Plan Monday: 3/8-3/14


I wasn't going to post my menu this week out of sheer laziness, and then I realized that I had already done the crux of the work by making the plan--typing it up is easy. The good news of this week is that Ish and I have decided to just eat late dinners when he has night classes. I am looking forward to this increase in cooking as it means a more regular meal plan.

Dinners:

Monday: Balsamic Zuchinni, Chicken and Tomatoes over rice. (This was so incredibly easy and delicious!)

Tuesday: Pumpkin Pancakes with Applesauce

Wednesday: Pineapple Salsa Chicken in the Crockpot, Brown Rice, Carrot Sticks

Thursday: Spicy black bean and tomato burritos, lemony avocado

Friday: Trader Joes Pesto Tortellini, Red Sauce, and a yet to be determined vegetable

Saturday: Leftovers

Sunday: Barbecue Chicken, Cheesy Broccoli and Rice, Carrot Sticks

Menu Plan Monday: 3/1-3/7


Wow! It is hard to believe it is already March and that spring is almost here (this probably has something to do with the amount of snow still on the ground). Anyway, on to the meal plan:

Dinners

Monday-
German Pancakes (held over from last week)

Tuesday- Pasta and bean salad (Ish@work)

Wednesday-Butter baked rice (healthified), BBQ chicken, Pineapple, Pepper sticks

Thursday-Yogurt, fruit, granola bar (Ish@work)

Friday-Pizza at Ish's parents' house to celebrate our nephew's 4th birthday

Saturday- Dinner with a group of friends (I may be cooking a turkey breast for this occasion)

Sunday- Lite Honey Mustard chicken, corn, carrot sticks, apple slices

Menu Plan Monday- 2/22-2/28

Last weeks menu did not go quite the way I planned it. It seems meals on Friday-Sunday are rather unpredictable as to whether or not we'll be home. We ended up eating at Ish's parents on Friday evening and with friends on Saturday evening. We ended up having a big lunch yesterday so when it came to dinner time neither of us wanted anything besides soup. It makes for an easy week for me when I only need to prepare meals for half of it. In other meal-planning news, the Southwestern Bean Skillet that we tried last week was fantastic (I will admit to changing the recipe so it wasn't so salty)! Both of us enjoyed it the first time around, and then we made the leftovers into burritos for lunch on Friday and enjoyed that just as much. It is a definite keeper.

Monday: Pasta, sauce, and salad

Tuesday: Salad, yogurt, and some sort of bread/cracker (Ish @ work)

Wednesday: Asian sesame chicken, brown rice, pineapple, and raw veggie sticks

Thursday: Yogurt, Banana Bread, and pineapple (Ish @ work)

Friday: German Pancake

Saturday: Leftovers or dinner with friends

Sunday: Irish Spaghetti

Menu Plan Monday: 2/15-2/21

Last week, we did not follow our menu very well. This is because Ish had nearly the entire week off from work; thank you 3 feet of snow in less than 1 week. The other contributing factor to us not following our plan is that we ate at the homes of family and friends on Friday, Saturday, and Sunday evenings--no complaints here! This week I will only be posting our dinner plans as our breakfasts and lunches remain pretty much the same from week to week.

Dinner:
Monday: Pasta w/ chicken and sauce, carrot sticks, and cucumber slices

Tuesday: Veggies, Flatbread, and hummus. (Ish @ class)

Wednesday: Southwestern Bean Skillet , tortilla chips, and lemony avocado. (Ash Wednesday)

Thursday: Mini-bagel with peanut butter, Yogurt, and a couple of Girl Scout Cookies as a special treat

Friday: Boca Burgers, baked potatoes, and salad

Saturday: Either leftovers or dinner with friends.

Sunday: Chicken and Spanish rice 1-pot meal.

Breakfast Options:
Mini-bagels

Lunch Options:
Leftovers
Grilled Cheese

Dinners:

Monday: Tricolor Rotini with Chicken Spaghetti Sauce and Carrot Sticks

Tuesday: Yogurt, Muffins, and a piece of fruit (Ish @ work)

Wednesday: Crockpot Ravioli and apple slices

Thursday: Veggie Sticks/Slices, Flatbread, and Hummus (Ish@ Work)

Friday: Spanish Rice and Chicken One-pot meal

Saturday: Baked Potatoes and Soup

Sunday: Chicken Fajitas and Black Beans & Tomatoes

Menu Plan Monday 02/01-02/07


As I currently am in the early stages of a head cold, I am planning a week of very simple meals.

Breakfast Options:
Cereal
Oatmeal
Eggs

Lunch Options:
Salad
Leftovers

Dinner:
Monday: Fend for yourself night. (Otherwise known as I fell asleep and my husband was kind enough not to wake me.)

Tuesday: Chicken Salad sandwich for Ish and some sort of soup and salad combo for me. (Ish@Work)

Wednesday: Chicken Marinated in Pineapple Salsa served over brown rice, carrot sticks, and cucumber slices.

Thursday: Flat bread, veggie sticks, and hummus for Ish. I will probably eat leftovers or a salad.

Friday: Dinner Out before Movie Night at the Library.

Saturday: Grilled Cheese Sandwiches, Soup, and Apple Slices

Sunday: Nachos with refried beans, guacamole, tomatoes, corn, salsa

Menu Plan Monday 01/25-01/31


Last weeks menu did not go totally as planned. We ended up eating with Ishmael's parents on Friday night--homemade pizza, yum! On Saturday night some friends invited us to their home for prayer, dinner, and a movie. Some meals got used to accompany our lunchtime salads and others have been pushed to this week.

Breakfast Options:
Cereal
Oatmeal
Eggs
Toast w/ Almond Butter

Lunch Options:
Refrigerator Salad Bar
Leftovers

Dinners:

Monday: Trader Joe's Punjab Choley over Brown Rice and Chilled Pineapple Chunks on the side

Tuesday: Leftover stirfry from Sunday night (Ish @ work)

Wednesday: Papa's Corn Chowder and Great-Grandmother Sadie's Corn Muffins

Thursday: Veggies and hummus, leftover muffin, and yogurt for Ish/ Leftover chowder, and raw veggies for me (Ish @ work)

Friday: Pasta with Homemade Pesto, Salad, and Garlic Toast

Saturday: We're eating dinner with friends to celebrate a birthday. I'll probably make some sort of bread or muffins to share.

Sunday: Breakfast for Dinner

Totally beat...

With the beginning of my second trimester my energy returned, but for the past 10 days or so, I have been really exhausted. I have been going to bed running on empty and waking up 8 hours later feeling just as tired as I was the night before. At first I thought I might becoming down with a cold, but that was not the case. It has led me to start to question my iron levels. I have a prenatal visit on Monday and I am planning on mentioning my exhaustion levels to my midwife. Until then, if anyone has any suggestions on boosting my energy in a healthy, baby-friendly way, I would greatly appreciate it.
